Vegan, refined sugar-free, gluten-free
One bite of this coconut ladoo will have you dreaming of being pampered in an Indian palace. A truly royal treat with the luxurious flavours of rose, pistachios, and freshly crushed cardamom. Enjoy this plant-based delight for the senses.
Makes 12-15 Ladoos

Ingredients
For The Ladoos:
1½ cup unsweetened medium shredded coconut, dried or fresh
1¼ cup full fat coconut milk
¼ cup + 1 tablespoon powdered jaggery
½ teaspoon crushed cardamom seeds
pinch of salt
2 tablespoons coconut flour
2 tablespoons pistachio, chopped into small pieces
1½ teaspoon rose water
¼ teaspoon beet powder or beet juice for colour (optional)
For The Topping:
⅓ cup unsweetened medium shredded coconut, dried or fresh
½ tsp beet powder or beet juice (optional)
Instructions
1. Create the topping by toasting shredded coconut over medium heat for 3-4 minutes, stirring continuously. Remove from heat and mix in beet juice or beet powder dissolved in equal parts water. Set mixture aside.
2. In a medium pot, combine the shredded coconut and coconut milk and bring it to a boil. Reduce to medium heat and simmer for a few minutes.
3. Add cardamom, salt and jaggery and continue to simmer for 2-3 minutes, stirring as needed.
4. Add in the pistachios and coconut flour, and continue to cook until the liquid is absorbed.
5. Once the liquid is absorbed, remove from the heat and add in rose water and beet powder. Stir to combine.
6. Shape the mixture into 12-15 ladoos while it’s warm. Roll the ladoos in the topping mixture. Ladoos will harden once they cool down.

When Raman went plant-based 8 years ago, she felt healthier and more energized than ever before. Eventually, she started to miss Indian sweets like Burfi, Ladoos and Gulab Jamuns that reminded her of her childhood and traditional Indian celebrations. When she found zero vegan alternatives in the market, there was only one thing left to do: create her own versions with no processed sugars and flours, no artificial colours and a lot less sugar. Her months and months of recipe tasting paid off when her vegan mithai were a hit at gatherings and parties among all ages and ethnicities. Raman and her business partner Karthik have since been helping the Indian community incorporate more nourishing plant-based foods into their diet by offering recipes, mithai boxes and celebration cakes through Sweet Souls. Their hope is for the current and next generations to get excited about Indian food that is healthier, energizing, and environmentally responsible.
